4 cups beef broth

2 pounds beef chuck (cut into 1-inch cubes)

3 cloves garlic, minced

3 tablespoons flour

1 shallot, diced

1 (14 oz.) can fire-roasted red bell peppers

1 (10 oz.) can cream of mushroom soup

1 (6 oz.) can tomato paste

Kosher salt and pepper, to taste

 

Instructions:

1. Prepare the beef:
Place flour in a large bowl and toss the beef cubes until well-coated.

2. Sear the beef:
Heat 1 tablespoon of canola oil in a large Dutch oven over medium heat. Work in batches to brown the beef cubes on all sides. Set the browned beef aside.

3. Cook the shallot and garlic:
Add the diced shallot to the same pot and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.

4. Build the flavor:
