Ingredients

4 chicken fillets (or skinless, boneless chicken thighs)

300g (10.5 oz) button mushrooms, sliced

1 medium onion, finely chopped

3 garlic cloves, minced

2 tbsp olive oil or butter

200ml (7 fl oz) heavy cream or crème fraîche

100ml (3.5 fl oz) chicken broth

1 tsp Dijon mustard (optional)

½ tsp dried thyme or herbes de Provence

Salt and pepper to taste

Fresh parsley, chopped, for garnish

 

Instructions

1. Prepare the Chicken

Season the chicken fillets with salt and pepper.

Heat 1 tbsp of olive oil or butter in a large skillet over medium-high heat.

Sear the chicken for 3-4 minutes per side until golden brown. Remove and set aside.

2. Cook the Mushrooms and Onion

In the same skillet, add another tbsp of olive oil or butter if needed.

Sauté the onions for 2-3 minutes until translucent.

Add the sliced mushrooms and cook over medium heat until golden and tender (about 5-6 minutes).

Stir in the minced garlic and cook for an additional 30 seconds.

3. Make the Creamy Sauce

Pour the chicken broth into the skillet and scrape the bottom to deglaze.

Stir in the heavy cream and Dijon mustard (if using). Mix well.

Add thyme or herbes de Provence and let the sauce simmer gently for 3 minutes.

4. Combine and Simmer

Return the seared chicken to the skillet, ensuring it’s coated in the sauce.

Cover and simmer on low heat for 10 minutes or until the chicken is cooked through and tender.

5. Serve and Enjoy

Garnish with freshly chopped parsley.

Serve hot with your favorite side: pasta, rice, or steamed veggies.
