Cowboy Butter Chicken Linguine Recipe
Ingredients
2 boneless, skinless chicken breasts
8 oz linguine pasta
4 tbsp unsalted butter
3 cloves garlic, minced
1 tbsp fresh lemon juice
1 tsp paprika
½ tsp cayenne pepper (optional for a spicy kick)
1 tsp dried thyme
1 tsp dried parsley
½ cup grated Parmesan cheese
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
1. Cook the Linguine:
Boil the linguine pasta according to package instructions. Drain and set aside.
2. Prepare the Chicken:
Season the chicken breasts with paprika, cayenne (if using), thyme, salt, and black pepper.
3. Sear the Chicken:
Heat 2 tablespoons of butter in a large skillet over medium-high heat. Sear the chicken breasts for 5-7 minutes per side until golden brown and fully cooked. Remove from the skillet and let rest.
4. Make the Cowboy Butter Sauce:
In the same skillet, melt the remaining 2 tablespoons of butter. Add minced garlic and sauté for 1 minute until fragrant.
Stir in lemon juice, dried parsley, and Parmesan cheese. Let the mixture simmer for 2 minutes to thicken.
5. Combine Chicken and Pasta:
Slice the cooked chicken into strips and return it to the skillet. Toss to coat the chicken in the buttery sauce.
Add the cooked linguine to the skillet and mix everything until evenly combined.
6. Garnish and Serve:
Sprinkle with fresh parsley and additional Parmesan cheese before serving.
