Ingredients

  • 1/4 cup chopped parsley
  • 1/4 cup grated Parmesan cheese
  • 1 tsp paprika

  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste

For the Tomato-Cucumber Relish:

  • 1 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 2 tbsp chopped fresh dill or parsley
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

1. Prepare the Chicken, Zucchini, and Corn Burgers

  • In a large mixing bowl, combine ground chicken, grated zucchini, corn, breadcrumbs, egg, minced garlic, parsley, Parmesan cheese, paprika, salt, and pepper. Mix well until fully combined.
  • Shape the mixture into burger patties (makes 4–6 burgers, depending on size).

2. Cook the Burgers

  • Heat a non-stick skillet or grill pan over medium heat and lightly grease with oil.
  • Cook each burger for 5–6 minutes per side, or until golden brown and fully cooked. The internal temperature should reach 165°F (74°C).

3. Prepare the Greek Yogurt Sauce

  • In a small bowl, whisk together plain Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper. Set aside.

4. Make the Tomato-Cucumber Relish

  • In another bowl, mix diced tomatoes, cucumber, fresh dill (or parsley), olive oil, lemon juice, salt, and pepper. Toss until evenly coated.

5. Assemble the Burgers

  • Place each burger on a bun or a crisp lettuce wrap. Add a generous dollop of Greek yogurt sauce and a spoonful of tomato-cucumber relish.
